VEGETARIAN PIZZA (Serves 4 people)

For pizza base:

1. 2 cups of wholemeal wheat flour

2. 1 tsp of pure raw honey

3. ¾ cup of filtered hot water

4. ¾ tsp of sea salt (or to taste)

5. 1 tsp of dried yeast

6. ¼ tsp of oregano

7. 1 Tbsp of rice bran oil

For pizza topping:

1. Make ‘Italian sauce’ recipe to spread over the pizza dough

2. 1 cup of walnuts

3. 1 cup of red onions (1 large red onion)

4. Tub of vegan cheese or make ‘Vegetarian cheese sauce’ (make thick, see chapter 1)

5. 1 cup of black olives

6. 250g of tofu (Lotus brand is helpful) [optional]

7. 1 small sized green capsicum

8. 1 small sized zucchini


For pizza base:

Step 1

In a glass mixing bowl, combine the hot water, honey, sea salt, rice bran oil, oregano & yeast, stirring to help dissolve the yeast.

Step 2

Add to the glass mixing bowl, the flour & blend & stir the mixture to a soft dough & knead for 5 minutes. Then cover the glass bowl mixture with a dish drying towel. Let it sit in a warm place for 1 hour for the dough to rise.

Step 3

Roll out dough to the desired thickness of pizza base crust.

Step 4

Flour the pizza tray first so that the dough does not stick. Lay pizza dough out onto pizza tray. Cut out any excess dough. Cook in a hot oven until lightly brown & then add pizza topping mixture when ready to cook (see below) & bake under a moderate temperature (180°C.) for a further 20 minutes. Otherwise, let pizza base crust cool for 30 minutes & then put glad plastic wrap over it & put in the fridge until the next day, to allow the yeast to deactivate, otherwise, it is a health risk.

For pizza topping:

Step 1

Make ‘ltalian sauce’ recipe (found under the chapter, ‘Curry, gravies, sauces & seasonings’).

Step 2

Cut up onions into rings. Chop up walnuts into quarter sized pieces. Cut up olives into half sized pieces. Cut up capsicum into strips. Cut up zucchini into 1/2 cm slices & cut these slices in half.

Step 3

Spread ‘ltalian sauce’ evenly over the base of the pizza that has already been baked.

Step 4

In a glass mixing bowl, combine; walnut pieces, olive pieces, capsicum strips, onion strips, zucchini pieces & mix thoroughly together (if using tofu, add this in as shallow rectangular pieces). Then spread glass bowl mixture over the pizza evenly. OR Place on the pizza, the individual ingredients, one at a time.

Step 5

Either, cut up vegan cheese tub into slices & put over the pizza or make ‘Vegetarian cheese sauce’ to go over the pizza, (which is found under the chapter, ‘Curry, gravies, sauces & seasonings’).

Step 6

Bake for a further 20 minutes on 180°C. Then serve.
